[CMake] Xcode settings

Why is there no way to default certain Xcode settings like ARCHS? If I unset CMAKE_OSX_ARCHITECTURES or set it to an empty string, I get an override of 32 and 64-bit instead of no setting which would use the default of 64-bit only.
