[CMake] Queries on CMAKE

Hi,

   I am new to CMAKE framework. I am looking for information on how to
cross-compile for 64 bit. In other words, which env variable needs to be
set to compile 64 bit binary (instead of default 32 bit) for my program?
And which is the variable to be set to force CMAKE to look into my include
path for header  files?
